1) I personally use Ubuntu 18.04 at demo (latest Ubuntu for development)
I can't recommend this or that, I believe user should use the OS he/she can 
administer
According to my personal experience setting up CentOS is a pain (problems arise 
in the places I would never expect)
But again, this is my personal experience

2) I have this line unchanged

I believe the task here is to ensure KMS is accessible by OM
So you should test 8888 port while you are at server (not from outside)

3) port 8888 is closed on demo
I believe "secure" version of KMS 
(https://doc-kurento.readthedocs.io/en/stable/features/security.html#securing-kurento-media-server)
BUT this is something I haven't tried yet
The above contains instructions for self-signed certificate, which shouldn't be 
used in production
So I don't have answer ATM :(((
