### Search before asking - [X] I had searched in the [feature](https://github.com/apache/incubator-seatunnel/issues?q=is%3Aissue+label%3A%22Feature%22) and found no similar feature requirement. ### Description I noticed that Seatunnel is currently using Java 1.8, but there are a large number of popular open source projects that use Java 17 as their default version (such as Airbyte). Java 17 is a great version, bringing not only the performance improvements of jvm itself, but also some very useful features.
