### Purpose of this pull request
This PR increases the timeout for `kafka-connector-it` from 120 to 180
minutes.
The Kafka CI job often takes close to 2 hours to complete, which can cause
it to time out and be canceled. Increasing the timeout ensures the job can
finish successfully.
### Does this PR introduce _any_ user-facing change?
No.
