SeaTunnel 2.3.13 does not support Iceberg table format v3. That release
packages Iceberg 1.6.1, whose `TableMetadata` accepts format versions only
through v2; setting `format-version = 3` will therefore be rejected as an
unsupported table format version.
There are also two option-name mismatches in the posted configuration. For
2.3.13, use `iceberg.table.auto-create-props` for table-creation properties and
`iceberg.table.upsert-mode-enabled = true` for upsert mode. Upsert mode also
requires an explicit `iceberg.table.primary-keys` value. Catalog settings such
as `type`, `uri`, and `warehouse` belong in `iceberg.catalog.config`.
Please use format v2 with the current 2.3.13 connector, for example
`iceberg.table.auto-create-props = { format-version = "2" }`. Do not force a v3
table with this dependency set. A v3 request needs a SeaTunnel release that
upgrades and validates the embedded Iceberg runtime first; current `dev` is
also still on Iceberg 1.6.1. If the corrected configuration still fails, attach
the actual exception and identify the execution engine.
