### Purpose of this pull request
Related to #10942. RowKindExtractor resets the input row to INSERT before
creating its output. A sibling branch then reads INSERT instead of the original
CDC kind. Set INSERT on the generated output row so the input retains its
original RowKind.
### Does this PR introduce _any_ user-facing change?
Yes. The extractor output is still append-only, while sibling branches
retain DELETE and UPDATE row kinds. EN/ZH transform docs are updated.
### How was this patch tested?
JDK 8 and 17: RowKindExtractorTransformTest, 3 tests on each, no
failures/errors/skips. The regression covers all RowKind values and both
SHORT/FULL representations, with field and metadata assertions. A real Zeta
fan-out job verifies that both branches extract DELETE; the original
implementation makes the sibling branch extract INSERT. Local Flink/Spark runs
were not performed.
Scoped Spotless, reactor `-DskipTests verify`, MarkdownTest (4 tests), and
`git diff --check` pass on the submitted revision.
