Hi Xavier, setting a property (@ContainerProperties) of 
org.apache.openejb.injection.FallbackPropertyInjector=com.foo.Impl should work. 
@MockInjector was useful only when providing an instance not created from 
newInstance() which doesn't make sense at class level.

Does that solve this issue?
