Drop OpenJPA/webprofile persistence detail from known-issues docs

KNOWN_ISSUES.md and KNOWN_FAILURES.md now report only the Plume/EclipseLink
persistence results. Runner capability docs (README.md files) keep the
TOMEE_CLASSIFIER=webprofile instructions since that mode is still supported.

 | `transactions` | Four `jta.ee.transactional.ClientEjblite*Test` vehicle
classes | Java 21, 2026-07-14 | TomEE's CDI transactional interceptors fail
transaction propagation, rollback-rule, and `TransactionScoped` context
assertions across the servlet, JSP, JSF, and filtered-servlet vehicles. A
failed assertion can leave transaction state active and cascade into later
methods, so the affected vehicle classes are excluded as a unit. |
 | `transactions` | JSP and servlet vehicles for `UserTransaction` rollback,
`setRollbackOnly`, and timeout (six classes) | Java 21, 2026-07-14 | TomEE
misses required `IllegalStateException`/`RollbackException` outcomes, and
timed-out transactions remain associated with request threads. The resulting
`NotSupportedException` failures move between methods according to execution
