Align the Jakarta Data TCK Hibernate libraries with hibernate-core 7.4.11
(#3089)
hibernate-core 7.4.11 needs hibernate-models 1.1.2 and byte-buddy 1.18.8;
with the pinned 1.0.1 the Hibernate run failed with NoSuchMethodError.
