Doc: sort overrides in table
This sorts the table alphabetacally based on the TSOverridableConfigKey
Value to make for easier finding.
A few options are not documented,
TS_CONFIG_HTTP_REQUEST_BUFFER_ENABLED (and its
proxy.config.http.request_buffer_enabled)
