IE on Mac has a very hard 32K limit on any individual text field as well as the overall length of data being posted back to the server. If you are posting large amounts of data, you'll need to use Safari or Netscape instead.
In terms of FileUpload there is a bugzilla entry on this somewhere (it may have been closed as wontfix) - the problem was something to do with line endings and boundaries. The method to go about fixing it was described in the bug. A bugzilla search should turn up plenty of useful information.
