The USB chip is integrated into the SOC, the sound chip is on another
bus. You can get arbitrary sound quality over USB, with a USB DAC.
Don't these cost (an order of magnitude) more than simple headphones + an adapter ?

Actually, no, they are not very expensive - $10 or so. There are much more expensive ones at $100+.
The $10 ones are adequate for 99.9% of users I'd guess.
