Dear Matt,
So you have a firewall running on the server. If it is a standard install I 
believe CentOS runs a firewall. You may want to add a rule to allow incoming 
traffic to the port on which the web interface runs (8080 by default). You can 
get information on the various configuration parameters at 
http://opencast.jira.com/wiki/display/MHDOC/Configure+Matterhorn+V1.1
