Yes, it would work.  Try Zterm.  It does okay at VT100
emulation.  Actually the only problem you might have is with the terminal
connection itself.  First you'll need a Mac modem cable and then, 
depending on the plug used on the device you might need what used to be
called a null-modem.  They're basically the same principal as today's
network cross-over cables.  If you need one, I think that Radio Shack
still sells them.

As for me, I usually use my Commodore 128 as my dumb terminal for my Unix
boxes.  I like the thought of all that Pentium power being slaves to my
6502 machine.
