With a lot of effort, you should be able to configure your Linux box as a netatalk AppleShare server and as an ethernet to LocalTalk router for AppleTalk. It may even be possible to configure your Linux box as a MacIP router so that you can run the TCP/IP protocol on your LocalTalk Macs. However, most of us would take the easier option and use a dedicated router such as a Kinetics FastPath or Cayman Systems Gatorbox for the routing and MacIP functions. Such routers aren't expensive and would reduce the load on your Linux box. The Gatorbox even has a Gatorshare option that will allow your Macs to see an NFS share on a Linux box as an AppleShare server, although I understand there are some issues with recent NFS implementations and shadow passwords.
