System 7 is OK on 68030 machines, though to be avoided on 68000 Macs.

Personally, I'd stick to 7.1 on an SE/30 unless you need 7.5's extra 
capabilities. But many people have massaged 7.1 to give much of what 
7.5 offers. Or strip 7,5 down to give just what you need - as on the 
Gamba site.
