Good question! I also acquired an SE/30 (OK, two of them!) and have an old 
SE around as well.

Forgive me if some of these overlap with others' suggestions:

let the kid bang on it with Keywack
use it as a clock  (blackwatch)
show a slideshow of family pictures (AfterDark)
Recipe database (filemaker II)

remove the guts and:
spray paint the case
planter
aquarium
puppet theatre
