Lots of people have done that, and there were several third-party upgrades for
it.

The biggest problem with them was PSU loading issues.  The SE's PSU is barely
robust enough for a hard disk of that era and a single floppy.  If you
encounter an SE upgraded in such a manner, in the interest of preservation, see
what you can do about finding a lower-power hard disk (newer, same RPM, and
equivalent capacity usually means lower power).
