The AppleTalk protocol comes with your system software. You set it to 
Ethernet with the AppleTalk (or Network) control panel. Then you use the 
Chooser to find AppleTalk file servers and printers. This is the easiest 
way to check out ethernet hardware (such as your card), and share files 
and printers, if you have a network with at least one other Mac.

For your SE, the TCP/IP protocol is something you add to your system with 
the MacTCP control panel. Later versions of the MacOS have this protocol 
built-in, called Open Transport, but MacTCP is the only way to get it on 
an SE. If your network assigns IP addresses dynamically (DHCP), you may 
have trouble getting MacTCP to work with it. I would check out the 
various System 6 help sites for more info about finding and using MacTCP.
