I'm a huge fan of silent computing, and I spend a lot of time running compact Macs from floppies. I also have a silent LC and IIsi (disabled fans), but my favorite and most used computer is my 512K with dual 400K floppy drives.
Have you considered using some of the removable media drives such as magneto optical? I think they are like floppies in that the disks only spin when they are in use. That would give you large storage capacity. Of course, it would also require at least a Plus (or 512Ke with SCSI upgrade).
