Serial: ClarisWorks, Kermit, ZTerm
Telnet: NCSA Telnet, Better Telnet
SSH: ?

A lot of systems use SSH2 these days, which will be a bit much for
any compact Mac (unless you are prepared to wait a while for
connections).

Most of this software supports 24x80.  I don't know if you can get
larger fonts at the expense of rows and columns.
