I hope I'm not repeating previous advice but here are a few more suggestions.
Try plugging your modern Mac and the CC directly into the 10 Mbps hub to cut down the permutations. Verify that you aren't using cross over cables in the wrong places. Hook the hub up to the 100Mbps router and confirm that you have internet access from the modern Mac.
Try working with the AppleTalk protocol rather than TCP/IP. You won't be able to connect to the modern Mac from the CC properly until you do some more hacking. But when AppleTalk networking is working, you will see the OS X Mac on the network. Use SharePoints to configure AppleTalk and AppleShare on OS X.
Check the LC cards for jumpers. Older Asante cards have a Link Integrity jumper -- this should be set to enabled for a modern hub.
Locate the network Software Selector applet on the CC and switch to Open Transport rather than Classic networking. When everything is working you can always switch back. Concentrate on getting AppleTalk working.
I know it's painful but consider a clean re-install of System 7.5.3 and rely on the Apple-supplied drivers to get you started.
