Yes, some (rare) video devices do have S-Video inputs/outputs in two RCAs. Obviously, one carries the luminance and other the chrominance. There must be S-Video to 2xRCA cables, but I haven't seen them. The mini-DIN S-Video connector is, of course, present on almost all devices (even in those using the 2xRCA method). And, just for the sake, there are other oddities in video input/output like NTSC- or PAL-timed RGB video outputs (three RCAs, one for red, other for green and a thir one for blue), or composite video over a BNC plug... not to mention the Scart in its several levels of compatibility (composite, separated, RGB...).
