As far as my experience goes: - System 6.0.x: works - System 7.0: works - System 7.5.3: works - A/UX 3.01: works, including X. Fine with 8 MB RAM. - NetBSD 1.6.2: works, including X Windows. Floppy and sound not supported, so you'll probably want internet through ethernet or over serial (the latter works for me). 8 MB memory is barely enough for simple console usage. - Debian Linux: probably works, I was able to boot to the installer.
