I don't know jack about DVI files and I never used LaTex, but I know the Apple Portrait Display can do 256 shades of gray. It can be driven directly by Mac II-style computers (I used it with a IIsi), but the SE/30 definitely needs a PDS graphics card to make use of it. (You need an SE/30 for the least as it has Color QuickDraw it it's ROM which is a must for anything above b/w). If the Portrait Display is shown with an SE/30 the latter should have the card built in, but ask to make sure. What range of monitors you can use besides the Portrait Display depends on the card built into the SE/30; the Lapis ProColorServer 24 I had in mine did millions of colors on a 17" screen, while the DisplayServer Plus only does 256 colors in 640x480. There were lots of other cards by Micron and other manufacturers so you'll have to ask the seller for details.
