Nick, I just had the same problem. Gmail is being over "helpful" by grouping all emails with the exact same title as a thread. So, goto your Sent folder. Look for the email with the Subject you just used. Notice there is a number in parenthesis to the right indicating the number of emails in the "thread". Select that email. Scroll to the bottom. And if it is not already " expanded", select the final email in the thread, and you should see the one you sent.
I sure wish there was more options in Gmail around this behavior.
