Cheese-bread, so far as I know, is a bread stuffed with cheese. I often enjoy them at Brazilian churrascarias. There are many delightful variations.
A cheesecake is something else entirely; it is almost all soft cheese, with a thin base and topping. The American variety is usually baked; I see from wikipedia that there are other varieties which look quite tempting. http://en.wikipedia.org/wiki/Cheesecake
