Connect the two Macs via Ethernet cable. Follow instructions to set up local File Sharing [OH NO!! Must read instructions...] http://docs.info.apple.com/article.html?artnum=106657. I think the 7500 has two ethernet ports -- AAUI and 10baseT, so a standard ethernet cable should work. http://www.macgurus.com/products/motherboards/mbppc75-7600.php

The 7500 isn't too ancient. Our 6100 and 7600 both have G3 cards and are still useful, the 7600 more so. My husband has been using it to convert our thousands of vinyl albums and tapes to AIFF. I gave the 6100 to my Dad a few years ago to replace the Quadra 605 he's been using for his business. I used the Quadra as a print server until my LaserWriter broke and wasn't worth fixing. My Mac SE still works: has PageMaker and Adobe Illustrator [on its 20MB HD], but the floppy drive is dead, so it's like an iMac--no floppy drive!
