We've used camcorders--Canon Elura and Canon Optura--and an iSight
camera, with PowerMac/iBook/MacBook to long-distance video messaging
using iChat. Analog video cams work OK, just not as well as DV cams. At
one meeting the other people were in San Francisco and we were in
Wilmington, Delaware. At another the two locations were in the US and
Australia. We used a projector to show the live chat to a group. I think
AIM can also do video messaging. There are many other programs that can
do this, but they're all more complicated than using iChat on a Mac.
Borrow a Mac.
You can also stream video from a Nokia web phone [N95, N800, etc.-- or
any high-end WiFi camera phone]. The phone streaming by itself is really
easy, but could be expensive unless you both have free reliable weekend
service! More complicated is streaming from the phone via WiFi to a
computer [or using a DV camcorder] with QuickTime streaming server,

Mac/Win/Linux
Use a DV camcorder with digital video [FireWire] out with a fast
notebook. Newer Mac notebooks have built-in video cameras but an
external cam is more convenient and has better resolution. You'll also
need a tripod.
What's the connection speed in the church and at your in-laws' location?
