You appear to have an installation script that unpacks the tarballs
immediately before attempting to build them, thus overwriting the update
you make from the supplied GNU URLs. You will need to modify that
script to copy the updated config.guess and config.sub scripts into
place between extracting the tarball and attempting to build the package.
You should also complain to whoever prepares the script and/or tarballs
that the tarballs are still packaging 2009-era config.guess and
config.sub in 2026.
