Maybe I found the problem after some search.
In /etc/squid/squid.conf the option logfile_rotate is set to 0. As per comment
in squid.conf file found in web:
# Rotate log files
# logfile_rotate specifies the number of logfile rotations to make when you
type 'squid -k rotate'.
# The default is 10, which will rotate with extensions 0 through 9.
# Setting logfile_rotate to 0 will disable the file name rotation.
#logfile_rotate 10
Create custom-template for squid option 25LogfileRotate with logfile_rotate at
5.
Expand template and restart squid service.
Wait for the next file rotation to see log file extension in /var/log/squid
