I think if you follow the wiki, and it is a new install, you can set:
config setprop letsencrypt ACCEPT_TERMS yes

Yup I get that :-)
If you don't actually run dehydrated itself you shouldn't break anything. You
can mod keys and expand templates and nothing should happen.
I haven't tried going back to v1 - though I don't see why it wouldn't work if
you just clear out the certs in /etc/dehydrated
Only issue might be rate limits, but I don't think you'll hit those too quickly
!
