Essentially when you are in test mode the HOOK entry does not appear in the
config file.
This is because if you are using the the original dehydrated and there was no
HOOK entry in the config it defaulted to using the entry in the dehydrated
script which was /usr/bin/hook-script.sh
As we are moving towards using the EPEL version of dehydrated this has changed
the default to /etc/dehydrated/hook-script.sh
I am tidying up the main template and will try and get his out for testing
shortly.
