I was able to get Gnome running on my 7500 by following the steps Vincent
Danen listed in this post:

Basically, there are a lot of packages that need to be installed to get
Gnome running, and it might be that they couldn't fit on the CDs.  I have
mirrored the cooker directory, so I installed the packages directly from
there instead of from the CDs.  Anyway, the list of packages that I
installed are:

libgdk-pixbuf-gnomecanvas1
fam
libfam0
libcapplet1
libnautilus0
libpanel_applet0
librep9
libeel0
krb5-libs
eel
libsrvg1
Oaf

And had to change a directory from
/usr/lib/rep/0.15.2/powerpc-mandrake-linux-gnu/rep/data to
/usr/lib/rep/0.15.2/ppc-mandrake-linux-gnu/rep/data

After I made those changes, Gnome starts fine.  I don't have the CDs with me
now, so I can't confirm if those packages are on the CDs or not, but you
should be able to get them from one of the mirrors.  I think I just used rpm
-Uvh to install the packages instaed of the software manager or urpmi.
