Yes it can. I have an old performa doing just that with an PC NIC that had not drivers on the Mac side, but did have it for Linux. I belive the NIC was a Netgear. Just get any PCI-based NIC that you know you can get tdrivers for linux (or which drivers might already be included in your /lib/modules/VERSION/drivers/net directory :-)
Of course, you can always just compile them yourself, this is linux after all.
