I believe this to be an easy fix, but I haven't messed with srpm spec
files yet (still learning).

Should be part of service script instead, as those files can also change over time.

only if it can be disabled in /etc/sysconfig/postfix

The sasl database /var/lib/sasl/sasl.db should also get copied.

NO.
You can't do that if you want to use sasldb based authentication, because you must keep the file in sync.
and you don't want to do that if you don't want to use sasldb.

mount -bind is the correct way to do it.
what is missing is a frontend to configure mail services, and it can be replaced with init scripts doing what the author of the script believe the luser wants to do.
