When I go in gnome-settings --> sound and check server
startup and sound events, and click ok, when I come
back again they are unchecked; and in fact esd never
starts up when I log into gnome.

Yes I do have xmms properly configured. In fact,
before this, when I started xmms and esd was not
running (I killed it or whatever) it spawned one it
self. But now it does not. Even if I run esd manually,
xmms or gnome can't talk to it.

When I start it manually I get the tone gradient, but
apparently no process is able to connect to it:

Permissions are not the problem.
The problem is easily solved by instaling the esound
packages from RedHat's RawHide (0.2.19-2); so that
right there tells there is a problem with esound. If I
go back to cooker packages I get the problem again.
