1) is the sound card correctly configured ?
which one is associate with sound-slot-0 in /etc/modules.conf ?
    the one you want ?
    eg: alias sound-slot-0 es1371

    check that snd-card-ymfpci isn't loaded

2) is the module loaded ?
what is the result of lsmod ? (should be es1371)

3) let see why one cannot open /dev/dsp:
   is something using /dev/dsp ? fuser -v /dev/dsp
can xmms or mpg123 play sound ?
if not, what does report strace mpg123 <some_mp3_file> ?
there should be some access error after thousands of syscalls.

4) let try alsa module:
   rmmod es1371 snd-card-ymfpci
   modprobe snd-card-ens1371

is mpg123 or xmms works better with the ALSA module ?
