NFS installs are the only way I install cooker (except for hd.img when I'm really desperate and the server is buggered).
So long as you know the complete export path from the server in question you should be able to install properly. I just finished an install on a 600Mhz Toshiba Laptop which happened almost flawlessly (save for sound not being configured).
