I'd suggest instead
/usr/share/texmf/doc -> /usr/share/doc/texmf-doc-1.0.7-54mdk/doc,
In order to have real file in most general standard location, and symlink in
lesser general location. That's a minor detail here, as everything is in
/usr, but would be more important if the files have been in different
partitions.
However, main point is to find documentation where you expect to find it.
