The same as with OpenOffice.org, unset DISPLAY or build in a VT.

Oh, and you probably want to let it resume compile or install like this:

finish compile:
$ rpm -bc --short-circuit `rpm --eval "%{_specdir}"`/evolution.spec
finish install
$ rpm -bi --short-circuit `rpm --eval "%{_specdir}"`/evolution.spec
make RPMs:
$ rpm -ba --short-circuit `rpm --eval "%{_specdir}"`/evolution.spec
