Hi Jan, This recipe sounds wonderful. I have one question. are the instant mashed potatoes the dry product or are the potatoes to have been prepared according to the box directions?

Mother's Honey Whole Wheat Bread 2 packages or 4 and a half teaspoons dry yeast 5 cups warm water ¾ cups butter ¼ cup honey 4 cups whole wheat flour ½ cup sugar ½ cup instant mashed potatoes ½ cup nonfat dry milk 1 tablespoon salt 6 to 7 cups all purpose flour Put the 5 cups of water in pan and add butter. Set Aside. Measure out, in a large bowl, honey, sugar, salt potatoes and milk. Warm water to 105 to 115 degrees Fahrenheit. Add to sugar mixture. Add yeast to half cup warm water. Add one teaspoon sugar. Add yeast to mixture and stir well. While that's foaming, and rising, add 4 cups wheat flour to the water and butter mixture. Stir well and add yeast mixture. Keep adding flour a cup at a time until its mixed well. You shouldn't be able to stir it any more. Dump dough out on floured counter and add the rest of the flour a little at a time. You start with a cup, and then less. Keep kneading until it's not sticky. Let stand for 5 minutes. Knead until smooth elastic and small bubbles appear in the dough, 8 to 10 minutes. Turn out into greased bowl. Turn dough over to grease top. Cover with kitchen towel and let rise for 1 to 1 and a half hours. It should be doubled in size. Punch down dough and place on clean cutting board. Divide in thirds. Cover with kitchen towel. Let it rest for five minutes. Shape into loaves. Place in 3 9 by 3 inch pans. Cover with kitchen towel. Let rise again until doubled, about an hour. Bake at 375 degrees for 50 to 55 minutes.
