Deep Dish Apple Pie Recipe Makes 8 servings.
Pie: 18 ounces prepared pie dough 3 pounds apples 1/2 cup sugar 3/4 cup golden raisins 1 teaspoon cinnamon 1 tablespoon lemon juice Streusel topping: 1/2 cup light brown sugar 1/2 cup plus 2 tablespoons all-purpose flour 1/2 cup (1 stick) unsalted butter, chilled 1 teaspoon cinnamon 1 teaspoon nutmeg 1 teaspoon allspice Pinch salt 1/2 cup chopped walnuts Whipped cream, to serve To prepare oven, pan: Preheat oven to 350 degrees. Butter 9 1/2-inch springform cake pan. Lightly dust with flour To prepare piecrust: On lightly floured surface, roll out pie dough. Use to line prepared pan. (Note: Dough should extend all the way up sides of pan.) To trim dough, fold excess over rim. Run rolling pin over rim. Refrigerate. To make pie filling: Peel, core and dice apples. In large bowl, combine apples, sugar, raisins, cinnamon and lemon juice. Mix well. Set aside. To make streusel topping: In food processor, combine brown sugar, flour, butter, cinnamon, nutmeg, allspice and salt. Process to form coarse crumbs. Add walnuts. Pulse several times until just combined. To bake pie: Transfer apple mixture to piecrust. Sprinkle streusel mixture over apples in even layer. Cover pie with foil. Bake for 30 minutes. Remove foil. Bake for 25 to 30 minutes or until top is golden. Cool slightly before serving.
