Turkey cakes with chipotle  mayonnaise 

1 green onion cut up 

Half cup loosely packed cilontro leaves 

1 cup left over mashed potatoes 

¾ pounds left over turkey skinned removed cut into large chunks about 3 cups 

1 tablespoon flour 

2 tablespoons vegetable oil 

IN food processor with knife blade, pulse onion and a half cup cilantro about 6 
times 

add potatoes and turkey pulse 5-7 times scraping sides to combine.  Turkey 
should be chunky.  Shape by third cups into 8 patties dust with flour.  

Heat the 2 tablespoons oil in skillet and cook turkey cakes 10-12  minutes 
until golden on both sides.  

to serve with  turkey cakes

Third cup mayo 

2 teaspoons hot pepper sauce with chipotle or odobo purey 

depending upon on how spicy you like it you can toss mayo and a whole chipotle 
in adobo or half of one  into the processor in fact, I sometimes make a larger 
batch of this mayo to just have around, you can also replace the mayo with 
ranch dressing and use it for dips too... 

I get a can of chipotles in adobo and keep them in a container in the fridge 
for a long long time... add one of the chipotle in adobo in a processor with a 
can of tomato sauce and you have enchilada sauce...
