Yellow Squash Muffins

  1                 lb  yellow squash -- steamed, cooled and pureed

  1                     egg

     1/2           cup  butter -- melted

     1/2           cup  sugar

  1 1/2           cups  flour

  1               TBSP  baking powder

  1                tsp  salt

 

Oven 375F  20-25 minutes

 

Prepare a muffin tin with pan release spray and set aside.

 

Muffin method:

What is the muffin method, you ask ? Combine all your dry ingredients in one

bowl, and all the wet ones in something else, then stir them together.

 

Combine squash, eggs, and butter. Measure dry ingredients into a large bowl.

Stir squash mixture in until thoroughly combined. Fill muffin cups 3/4 full.

 

Bake as directed
