SPICY PUMPKIN SHEET CAKE

  4 eggs
  1 3/4 cups pumpkin; solid pack (16 ounce can)
  1 cup sugar
  3/4 cup brown sugar; firmly packed
  1 cup oil
  2 cups flour
  2 teaspoons baking powder
  1 teaspoon baking soda
  1 teaspoon cinnamon
  1/2 teaspoon ginger
  1/2 teaspoon nutmeg
  1/2 teaspoon salt
  Cream cheese frosting


Beat eggs in large mixer bowl. Add pumpkin, sugars and oil; beat well. Add remaining ingredients except frosting. Beat until well blended. Spread into greased 15 x 10 x 1 inch jelly roll pan. Bake at 350 degrees for 25 minutes or until toothpick inserted in center comes out clean. Cool. Frost with cream cheese frosting.


Cream cheese frosting: 1 packet cream cheese (8-ounce), softened; 1/2 cup margarine; 1 pound powdered sugar; 1 teaspoon vanilla; 1/2 cup pecans. Cream the cheese and margarine. Add remaining ingredients. Double ingredients if you like a lot of frosting.
