POTATO CANDY My Mom used to make this when we were growing up. It's delicious. It sometimes is referred to as "poor man's fudge" too, I think.
1 large potato, cooked and peeled Powdered sugar (at least a pound) Peanutbutter 1 tsp vanilla (optional) Boil your potato. Mash with powdered sugar until it forms a soft dough. (Vanilla may be added during mixing of potato and sugar.) Roll out dough on sugar-dusted waxed paper. Spread peanutbutter over top of dough. Roll in jelly roll fashion. Flatten out and chill in refrigerator. When firm cut into slices. Enjoy!
