Cranberry Sweet Potato Bake

A colorful, tasty combination of sweet potatoes, apples, cranberries and 
raisins. Even the kids will ask for seconds. No more left over sweet 
potatoes! :)

1/2 bag (1 pound) Roasted Sweet Potatoes (these are roasted in cubes and
frozen -- 1 bag is 2 pounds)
1 cup Cranberries, fresh or frozen
1 large Apple, peeled, cored & cut into 1/2 inch cubes
1/2 cup Raisins
1/2 cup Cranberry Juice
1/3 cup Pecans, chopped (can use walnuts instead)
1/4 cup Butter, melted (can use margarine instead)

1. Preheat oven to 350 degrees F
2. Combine sweet potatoes, cranberries, apple, and raisins
3. Toss this mixture with the melted butter
4. Place in a 9"x9" baking dish. Pour cranberry juice over the top.
5. Bake for 20 minutes or until the dish begins to set. Add (mix in) the 
nuts
and cook an additional 10 minutes.
