Soft Buttermilk Sugar Cookies
1 1/4 cups sugar, divided
1/4 tsp ground cinnamon
1/2 cup shortening
2 eggs
2 tsp vanilla
2 cups flour
2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1/2 cup buttermilk
In a small bowl, combine the 1/4 cup of sugar and the cinnamon. Set aside. In
a large bowl, cream the shortening and the remaining sugar until light
and fluffy. Beat in the eggs and vanilla. Combine the flour, baking powder,
salt, and baking soda. Add to the creamed mixture alternately with the
buttermilk.
The Batter Will Be Moist. Drop by tablespoonfuls onto a greased baking sheet.
Sprinkle with the reserved cinnamon-sugar. Bake at 375 F for 8-10 minutes
or until the edges begin to brown. Remove to wire racks.
Makes about 2 1/2 dozen
