Ok, first thanks to all for your suggestions. I sort of took those and used what I had on hand to make a great meal. ½ stick of butter 1 cup white rice 1 medium onion 1 green pepper 3 garlic cloves 1 can cream of mushroom soup 1 can mushrooms (my daughter digs mushrooms) 2 table spoons lemon juice 2 table spoons Cajun seasoning 1 half block of cracker barrel sharp cheddar grated. About 2 cups. Cook rice, and let cool. I sautéed the onion, garlic, and green pepper in the butter for about 5 minutes. Added the shrimp, mushrooms and Cajun seasoning. Mixed well. Added lemon juice to the mixture and sautéed for another 5 or so minutes over medium heat. Removed from heat and let cool. In a large mixing bowl I combined the rice, mushroom soup, half the cheese and shrimp mixture. Mixed it well and put it into a round casserole dish. Topped with remaining cheese and cooked at 350 for 40 minutes. Both wife and daughter said we need to keep this one! It was a hit. Thanks again for all the suggestions.
