Jarred mayonnaise hardly ever goes bad if refrigerated after opening. The widespread belief that food poisoning is a frequent occurrance at picnics and such gatherings because of the mayonnaise in potato salad and other foods is a myth.

If you make mayonnaise fresh, it will keep for only 2-3 days, but the jarred mayonnaise will keep for many months if refrigerated promptly after opening and after each use. Becareful though not to alter it by dipping the knife you used to spread the mustard or chop the tomatoe into the mayo jar!
